Sweet potato croquettes

We have a recipe for sweet potato croquettes which are quick to prepare and work brilliantly with a salad or a lunch box snack. Just cook sweet potatoes, mash them and combine with the rest of ingredients. Shape them into long croquettes and roll into crushed rolled oats and then fry.

These crunchy-on-the-outside, but creamy inside sweet potato croquettes are loaded with healthy ingredients.

Sweet Potato Croquettes

COOKS IN: 40 minutes


  • 400 g sweet potatoes
  • 20 g butter
  • 1 medium egg
  • 40 g crushed oat flakes
  • 20 g spelt semolina
  • 2 teaspoons dried oregano
  • Salt & Freshly ground black pepper
  • 50 g crushed oat flakes for breading
  • Sunflower oil for frying


  1. Peel sweet potatoes, cut into small pieces and cook in a large saucepan for about 10 minutes or until tender. Drain well and return to the saucepan.

  2. Mash sweet potatoes using potatoe masher and combine with butter, beaten egg, oat flakes, semolina, oregano, salt and pepper. Place in the fridge for about 30 minutes to firm.

  3. Heap the tablespoon of mixture and shape into croquettes, roll them into crushed oat flakes.

  4. Place a frying pan over a medium heat, add a few tablespoons of oil and fry croquettes in bathes until golden and crisp, turning occasionally.

  5. Remove the croquettes from the pan and drain on paper towels.
