Simple Chocolate Cake

For those looking for a simple cake which will amaze your friends and family, this chocolate cake is a must. Use the best quality chocolate with a high percentage of cocoa and you will get rich and moist cake. This cake is rich, moist and for real chocolate lovers. For a healthier version of this cake instead of caster sugar you simply use agava syrup (2-3 tablespoons). It won't impact the texture or taste of the cake. Buckwheat flour in this cake gives better flavour to the cake.

DIFFICULTY: SUPER EASY
- Snap the chocolate into a large bowl, add the butter and place over a pan of simmering water, until melted, stirring regularly. You should get creamy texture. Leave to cool for a few minutes.
- Add the sugar into the mixture and then egg one at a time. Add the mixture of plain and buckwheat flour as well as chopped walnuts. Add a dash of amaretto liqueur. You should get thick and smooth batter.
- Pour the batter into a loaf pan (21cmx11cm) lined with baking paper, leaving enough paper to hang over two sides of the pan for easier unmolding. Bake the cake in a preheated oven at 180°C for 25-30 minutes. The cake should be a moist, not so dry.
- Allow to cool and then carefully transfer to a large chopping board and cut into slices. Delicious served with a dollop of whipped creme or a scoop of vanilla ice-cream.
