Sicilian Almond Cookies

Sicilian almond cookies also known as almond dolcetti, pasticcini di mandorla or if made with bitter almonds as amaretti. These soft little cookies are incredibly easy to make and gluten-free too.

Paste alle mardorle or almond cookies are one of the simplest and most delicious cookie recipes you could make. These cookies originates from Sicily, where the land is full of sunshine and the climate is perfect for citrus fruits and almonds.

Sicilian Almond Cookies

COOKS IN: 30 minutes plus chilling


  • 250 g almond flour
  • 250 g caster sugar
  • 2 egg whites
  • 1/2 teaspoon almond extract
  • Icing sugar for coating


  • Combine the almond flour and sugar in a medium bowl. Add egg whites and almond extract and mix everything. If the mixture is too hard add more egg whites as needed. Use your hands to shape the mixture into balls about the size of a small walnut. Roll cookies in the icing sugar and place on a baking tray lined with baking paper. Bake in the oven preheated to 180 C for about 12 - 15 minutes.
