MAKES: 1 loaf
COOKS IN: 1 hour 20 minutes

  • 200 g plain flour
  • 100 g corn flour
  • 100 g whole grain spelt flour
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 7 g dry yeast
  • 150 ml lukewarm milk
  • 100 ml lukewarm water

  1. Combine together flours, dry yeast, salt and sugar into a medium bowl. In a jug mix lukewarm milk and water. Gradually add liquids to the dry ingredients and bring everything together with your hands until you get a smooth dough. Turn on a floured surface and knead until smooth and elastic - for about 2-3 minutes.

  2. Place the dough into a bowl, cover with kitchen towel and let rise in a warm place for about 20 minutes. Once risen, shape the dough into a long loaf and place it onto a lightly oiled baking tray. Let rise in the warm oven for another 20 minutes.

  3. Bake in the oven preheated to 180°C until golden brown (for about 30 minutes). Leave to cool slightly on a wire rack and then remove from the oven to cool completely.
