Marzipan spelt cookies

No Christmas table is complete without trays of delicious cookies. These simple cookies will melt in your mouth and are sure to have guests coming back for a second handful.

In this recipe we used combination of plain and spelt flour as well as ground walnuts which gives nuttier flavour to the cookies. A special ingredient in this recipe is almond paste known as marzipan which can be bought from food stores or can be made at home from almonds, sugar and egg whites. We absolutely love the burst of flavours that these cookies have, thanks to added orange juice and freshly grated orange zest.

These cookies are the perfect finish to a brunch, lunch or a dinner but are also suitable for breakfast and snacks throughout the day.

Marzipan Spelt Cookies

Marzipan spelt cookies

SERVES: 40
COOKS IN: 40 minutes plus chilling time
DIFFICULTY: Easy


INGREDIENTS

  • 200 g plain flour
  • 200 g spelt flour
  • 250 g butter
  • 80 g caster sugar
  • 100 g walnuts
  • 100 g marzipan
  • 1 teaspoon baking powder
  • Grated zest of 1 orange
  • Juice of 1 orange
  • 1 pinch of salt

PREPARATION

  1. Cube the slightly softened butter and marzipan into a medium bowl, add grated orange zest and orange juice and beat with an electric mixer until you get a smooth and creamy texture.

  2. In a medium bowl combine both flours, baking powder and a pinch of salt.

  3. Ground the walnuts and fold them into the butter mixture. Gradually add flours and using your hands mix together until you get a smooth dough. Wrap it in a cling film and place in the fridge to firm up for about 30 minutes.

  4. Preheat the oven to 175°C and line the baking tray with baking paper.

  5. Dust the working surface with flour and roll out the dough to 3-4 mm thick and cut out shapes using your favourite cookie cutters. Transfer the cookies onto the prepared baking tray.

  6. Bake the cookies for about 10-12 minutes or until they are slightly brown at the bottom. Let the cookies cool on the baking tray for 2-3 minutes and then transfer them to a wire rack to cool completely.
