Homemade Potato Gnocchi

You'll be amazed how easy it is to make homemade potato gnocchi at home. Just cook the potatoes until tender, mash them then add flour, an egg, salt and knead a soft dough. Turning the dough into a bunch of tender and airy gnocchi will be the most interesting part of making this Italian food.

Once made, you can prepare the gnocchi in many ways, from just frying them on a pan, pairing with classic Italian sauces such as pesto, classic tomato or just simple meat ragu. You can also bake them in the oven paired with some delicious sauce and sprinkled with cheese.

If you are looking for a simplicity, just melt some butter on a frying pan, add dried herbs and toss freshly cooked gnocchi into this. Your quick and delicious meal is ready!

Homemade Potato Gnocchi

MAKES: 400 g
COOKS IN: 1 hour


  • 500 g floury potatoes
  • 100 g plain flour
  • 1 medium egg
  • Salt for seasoning


  1. Peel the potatoes and chop into smaller chunks and cook in a large pan of boiling salted water for 10 - 15 minutes or until tender.

  2. Drain the potatoes, then return to the pan and mash well using potato ricer or masher. Tip the potatoes onto a clean work surface and sprinkle over the flour. Make a well in the centre and add the egg and salt. Very quickly mix together until the dough just forms, then shape into a ball.

  3. Divide the dough into 4 equal pieces. Roll each piece into a log about 1.5 - 2 cm thick. Cut each log into 2 cm pieces. Leave the gnocchi on the air for about 10 - 15 minutes.

  4. Cook gnocchi in a pan of boiling salted water for 1 - 2 minutes or until they float on the top. As soon as they come up to the surface they're ready. Remove gently with a slotted spoon and serve with desired sauce.
