We love zucchini and how abundant it is in the summer, but it's also vegetable you can find all year-round. There is so much to do with zucchini and we have one simple recipe for making crispy zucchini chips.

You will adore these healthy snack you can take with you on a picnic or enjoy in the company of your family. For this recipe you basically just need zucchini, oil and seasoning. Just slice the zucchini, season with salt and bake in the oven on a low temperature.

In this recipe we bake zucchini in the oven and basically use it as dehydrator. Because of how low the temperature is and how long you bake it for, you're basically drying out the zucchini.

Useful tips for making zucchini chips

  • Be sure to slice zucchini thinly - 0.5 mm so the chips is crispy once baked. You can do this with sharp knife or using a mandolin slicer.
  • You must use paper towels to press out excess liquid.
  • You must lightly oil the zucchini chips.
  • You must bake the zucchini chips at 110°C until the most liquid/oil vanish.
  • Zucchini might stick to baking paper because you are trying to remove it from the oven too quickly and not giving it enough time to crisp up.
  • You should let zucchini cool on the baking paper for at least 10 minutes before trying to remove it from the paper.

Ingredients

  • 1 medium zucchini
  • 2 tablespoons olive oil
  • Salt for seasoning

Instructions

  1. Slice the zucchini thinly using sharp knife or mandolin slicer. Place sliced zucchini on a sheet of kitchen paper and press them with another sheet to draw out the liquid.

  2. Prepare baking tray by lining in with baking paper. Place zucchini slices on prepared baking tray next to each other, making sure not to overlap them.

  3. Pour the olive oil in a small bowl, take a pastry brush to brush each zucchini slice. Sprinkle zucchini slices with salt.

  4. Bake on 110°C for about 1 - 1.5 hour or until they start to brown and become crispy. Let cool before removing and serving.
