Buffalo Mozzarella is one of the most famous Italian cheeses. It is delicacy traditionaly made in the regions of Campania, Molise, Puglia and Lazio.
It is made from the milk of water buffalo. The term mozzarella derives from the procedure called mozzare which means 'cutting by hand'. It is appreciated for its elastic texture and often called 'the queen of the Mediterranean cuisine' or 'white gold'.
In Italy, the cheese is produced nationwide using Italian buffalo milk under the official name of Mozzarella di Bufala Campana DOP. It is produced in areas ranging from Rome in Lazio to Paestum near Salerno in Campania, in the province of Foggia - Apuglia and in Venafro - Molise.
